We tried to use a restaurant gift certificate that was 3 years old and were told that it was too old. There is no expiration date printed on it and the owners are the same.

Unfortunately on the receipt when you purchased the gift certificate it should have stated that it would expire within 6 months to a year as that is the term period for most gift certificates. So unless you have kept the receipt as proof that this certificate didn't have an expiry date to go along with your certificate the standard would be the 6 month to 1 year time limit.

this is a very old dispute and has been settled legally once. even if a gift certificate has a expiry date, the company can not press that date, since it is actually a legal tender like money. the company has taken money and not offered yet the service for it. it would be like, you get a loan from the bank and never pay it back because it expires…
to find the actual case for that, you should try and google it…
It may depend on the state you are in. I believe that according to the laws of the state of Pennsylvania, if a business takes money and issues a gift certificate, the business is required to honor the certificate at any time or turn over the money taken for the certificate to the state as found property so that the holder of the certificate may claim it from the state.
